ABOUT Open Chicken Burger RECIPE

Sliders are the new rage and this burger takes its inspiration from there. A nouvelle concept where the eater can see all the components gone into the making of the dish, the Open Chicken Burger makes for a visually pleasing and very appetising choice.

Ingredients Serving: 4

  1. For beéchamel:
  2. 2 tablespoons butter
  3. 2 Tablespoons all-purpose flour
  4. 1½ cup whole milk, hot
  5. For chicken:
  6. 1 tablespoon vegetable oil
  7. 4-5 cloves garlic, finely chopped
  8. 1 large onion, finely chopped
  9. 1 stalk fresh celery, finely chopped
  10. 1 small green capsicum, diced
  11. 350 gm chicken cubes, chopped into small dices
  12. 2 jalapeños, finely chopped
  13. Salt to taste
  14. Black pepper powder to taste
  15. 4 large sesame burger buns, cut into half horizontally & lightly toasted
  16. 1 cup grated cheddar cheese
  17. A few sprigs of fresh parsley, finely chopped

Instructions

  1. For the béchamel, heat butter in a heavy pan over medium flame and add flour. Cook the mixture till the raw smell of flour disappears, but the mixture does not change colour.
  2. Reduce flame to low and whisk in hot milk. Stir continuously till the sauce thickens and remove from flame. Set aside.
  3. For the chicken, heat oil in a frying pan over medium heat, add garlic, onion and celery and sauté till the onion turns translucent.
  4. Add capsicum and chicken, and cook till the chicken is done, for about 6 minutes.
  5. Mix in the prepared béchamel with jalapeño, salt and pepper, and remove from flame.
  6. Divide the mixture into 8 equal portions and spread each portion onto a burger bun half. Divide the cheese into 8 equal portions and sprinkle one portion over each open burger.
  7. Place one open burger on top of another open burger to make a double decker open burger. Repeat with the remaining burgers.
  8. Sprinkle over with parsley and serve immediately with any salad of your choice.
