ABOUT Apple Rabdi Served with Jalebi Caviar RECIPE

Jalebi is one of the most celebrated dessert in the history of India. Jalebi along with Rabdi is divine to taste. Jalebi is a popular Indian dessert made with maida and sugar syrup. This crispy sugary spiral tastes brilliant when served with piping hot milk or chilled Rabri. Traditionally, a muslin cloth with a small outlet is used to make the Jalebi, by pouring it in a spiral shape in the piping hot oil. However, my version is little different from the regular circular Jalebi. I'm going to make Jalebi Caviar and is a twist to this recipe. The golden rule to make amazing Jalebis, is by well fermenting the batter. To make this Jalebi even better add some soaked saffron water to the batter this gives a beautiful yellow tint to this recipe and the aroma of saffron makes it more delightful. If you like it in the traditional way, you can serve it with Rabri , but if you have time impress your guests with my Apple Rabdi and Jalebi Caviar recipe. However, I suggest you to serve with the Apple Rabri in the much authentic way and garnish it with some crushed pistachios and kesar strings ( saffron strings). So make this delicious delicacy and enjoy with your loved ones.

Ingredients Serving: 5

  1. 1/2 liter milk
  2. 1 Medium Sized Apple, Grated
  3. 1/2 cup Sugar
  4. 1 tsp cardamom powder
  5. Pinch of Saffron (Kesar)
  6. Roasted Chopped Almond
  7. Roasted Chopped Pistachios
  8. Cashews, Chopped
  9. Raisins (optional)
  10. For Jalebi Caviar : 1 Cup Maida Batter/ Jalebi Mix (readymade)
  11. Sugar Syrup with Saffron (Kesar)

Instructions

  1. Method For Apple Rabdi : Keep the milk on a medium flame and wait till it comes to a boil.
  2. Now, reduce the flame to low and keep stirring till it reduces to half.
  3. Till the time peel and grate the Apple.
  4. On another non-stick pan add the grated Apple and saute. Roast it on the medium flame. Keep stirring the milk also on the other side.
  5. Add sugar to the Apple in the pan. Keep stirring the mixture until the Apple changes it's color and becomes slightly brown.
  6. Now add the Apple mixture to the milk and mix. Leave it for 2 mins.
  7. Add the cardamom powder and saffron and all nuts chopped to the milk. Stir all together.
  8. Leave it for 2 mins on a low flame.
  9. Apple Rabdi is ready to serve.
  10. Method For Jalebi Caviar : In a deep wok/Kadhai take oil and when the oil/ghee is hot.
  11. Add water to the premix jalebi and make a smooth mixture or take the fermented maida batter.
  12. Fry the batter in oil/ghee using a perforated spoon so as to give small beads of the same.
  13. Remove these small beads and add them to the warm sugar syrup with saffron.
  14. Keep the small jalebi beads in the syrup untill they become soft or have absorbed all the syrup.
  15. Now remove them on a plate.
  16. Take a plate and mold these small beads in a shape of your choice and pour Apple Rabdi around the moulded Jalebi Caviar.
  17. Garnish with chopped Pistachios and Almonds and Saffron.
  18. Apple Rabdi Served with Jalebi Caviar is ready.
