ABOUT Chicken Mince Pie RECIPE

Fusion food can be interesting mix of different cuisines and gives me an opportunity to create my own experiment with unique ingredients belonging to a particular corner of the world. Here I'm presenting a fusion of Mexican flavored chicken mince with Irish classic Shepard's Pie. The Shepard's Pie is made with lamb, but I have substituted it with chicken and named my dish simply as Mince Pie.

Ingredients Serving: 3

  1. 1 lb chicken mince
  2. 1 large onion minced
  3. 4-6 minced garlic cloves
  4. 1 bay leaf
  5. 1/2
  6. 1 packet McCormick Chili powder
  7. 2 tbsp Mexican salsa
  8. 1 tbsp tomato sauce
  9. 1 tsp paprika
  10. 1 tsp chili powder
  11. 1 tsp cumin powder
  12. 1/2 tsp all spice or garam masala powder
  13. 1 tsp onion powder
  14. 1 tbsp dried parsley
  15. 3 tbsp olive oil
  16. Salt and pepper to taste
  17. For Topping: 3-4 large boiled potatoes
  18. 1/4 Cup Cream
  19. 1/4 to 1/2 cup milk
  20. 1 tbsp softened butter
  21. To Assemble: Dash of breadcrumbs
  22. Grated Parmesan cheese (As per requirement)
  23. Dash of chili flakes
  24. Sprinkling of dried parsley

Instructions

  1. Wash and drain chicken mince. Pat dry till all moisture evaporates.
  2. Heat oil in nonstick frypan. Add bay leaf and cinnamon and stir for few seconds till lightly browned.
  3. Add garlic and onions and sauté well till onions start to caramelize.
  4. Add chicken mince and stir well till all lumps are separated and mince is thoroughly mixed with oil. (Do not keep pan covered with lid else water will be released too).
  5. Add the chili powder, cumin powder, paprika, onion powder, and McCormick packet to the mince. Mix well.
  6. Cook chicken till it releases oil.
  7. Add salsa and tomato sauce. Mix again.
  8. Add salt, pepper and all spice powder. Stir well.
  9. Finally add dried parsley. Mix well. Cook chicken thoroughly.
  10. Once potatoes are boiled, peel and Mash them thoroughly with no lumps seen. Add the remaining ingredients and mix well. The texture should be smooth and thick.
  11. Take a casserole (or individual ramekins) and grease it with butter.
  12. Ladle the chicken mince evenly into the casserole.
  13. Spread the mashed potatoes over the mince evenly. (Take ziplock bag, place it in a tall glass, open it mouth wide and stuff the mash in it.
  14. Close it and press the mash towards the pointy end of bag. Snip off the pointy end and use it as piping bag-helps to creates design if preferred.
  15. Sprinkle breadcrumbs, cheese, chili flakes, and parsley over the mash.
  16. Bake in oven for 20-25 minutes or till the top side looks crisp.
  17. Remove from over and serve it immediately.
