ABOUT Onion Stuffed Hand Pies RECIPE

These Hand Pies are interesting mix between traditional pyaz ki Kachori and American Pastry Pies. They can be served at any event be it a birthday party or special get-together. These can be made a day ahead and frozen for any future use, just remember to thaw them before baking.

Ingredients Serving: 12

  1. For stuffing: 2 large Onions chopped
  2. 1 boiled and mashed potato
  3. 1 tsp cumin seeds
  4. 1 tsp nigella seeds (kalonji)
  5. 1 tsp Fennel seeds
  6. Dash of hing (asafoedita)
  7. 2 green chilies chopped finely
  8. 1-1/2 tsp red chili powder
  9. 2 tsp coriander powder
  10. 1 tsp garam masala powder
  11. 1/2 tsp fennel powder
  12. Salt to taste
  13. 3 tbsp oil
  14. For outer cover dough:
  15. 12-1/2 oz all purpose flour (Maida)
  16. 1 tsp Salt
  17. 16 tbsp very cold butter
  18. Ice cold water (only to get dough together ..about less than 1/2 cup)
  19. Melted butter as per need

Instructions

  1. For Stuffing:
  2. Heat oil in nonstick skillet. Add green chilies and sauté.
  3. Add cumin seeds, fennel seeds, and nigella seeds. Add hing.
  4. Now, add the onions and stir fry onions till lightly caramelized.
  5. Add all dry masalas. Stir well to infuse all flavors.
  6. Add mashed potato and salt to taste. Blend potato well with the masala.
  7. Remove skillet from heat and cool thoroughly.
  8. For Pastry Pie Dough: Whisk flour and salt together.
  9. Cut butter into the flour and rub it between fingers along with flour to resemble big sized breadcrumbs.
  10. Add ice water till the dough comes together little at a time. Knead it less than 10 times else it turns hard.
  11. Wrap in cling film and refrigerate for minimum 30 minutes.
  12. Preheat oven to 350 Deg F (180deg C) for at least 10 mins.
  13. Roll the dough between two parchment paper sheets. Cut into round shapes with the help of a jar lid. Place the filling in the center leaving the edges clean.
  14. Apply water to the edges of the circular discs and cover with another piece of same shaped dough. Seal edges with fork dipped in flour.
  15. Brush melted butter over the Hand Pies before baking. Arrange these pies on baking tray lined with parchment paper.
  16. Bake for 30-35 minutes or golden in color.
