ABOUT BROCCOLI DHABELI RECIPE

Broccoli is Italian origin and Dhabeli is originated in Gujarat, India. Its again a fusion of India and Europe. One such quick healthy snack for my quests of all age is Broccoli Dhabeli. DHABELI twist with BROCCOLI. The broccoli and spicy potato mixture with different chutneys, sev, peanuts and pomegranate seeds fulfills my taste buds completely. This mixture is sandwiched between butter toasted pav topped with sweet tamarind date chutney, mint chutney. They all blend perfectly together to give you a bunch of flavours and textures in each bite – a party for your taste buds!

Ingredients Serving: 3

  1. 3 Pavs
  2. 3 tbsp Dhabeli masala powder
  3. 2 Potatoes boiled and mashed
  4. 1 cup broccoli blanched and fine chopped
  5. 2 medium size Onions chopped
  6. ¾ cup Sev
  7. ½ cup peanuts roasted
  8. Oil
  9. Salt to taste
  10. Lemon juice
  11. ½ cup Sweet date and tamarind chutney
  12. 1 tablespoon Sugar
  13. ½ cup Pomegranate pearls
  14. ¼ cup Fresh coriander leaves
  15. 1/2 cup Mint chutney
  16. 3 tablespoons Butter

Instructions

  1. Heat oil in a pan. Add potatoes, broccoli, salt and a little water. Mix well and add dabeli masala, lemon juice, half sweet tamarind chutney. Mix and cook till the moisture is absorbed.
  2. Transfer the mixture into a plate and spread it. Add lemon juice, onions, peanuts coconut, pomegranate pearls, half the sev and coriander leaves over the top.
  3. Slit the pavs horizontally without cutting through and spread butter on it
  4. Spread mint chutney on both the sides of pav, sweet date and tamarind chutney. Sprinkle onion and sev in between the two halves.
  5. Make a patty of the Brocoli and Potato mixture and place it inbetween the Pav. Place the stuffed pavs on a hot tawa. Press slightly and toast with a little butter, till done. Serve hot.
