Broccoli and Cheddar Soup

Ingredients to make Broccoli and Cheddar Soup

  • 1 Broccoli head florets
  • 1 stalk celery chopped
  • 1/2 chopped onion
  • 4-5 minced garlic cloves
  • 1/2 cup shredded cheddar cheese
  • 2 cups warm milk
  • 500 ml cup Veg stock/water
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp flour (maida)
  • Salt and pepper powder to taste
  • 1/2 tbsp Red chili flakes
  • Dash of dried basil and oregano/rosemary
  • 2 tbsp oil to fry vegetables

How to make Broccoli and Cheddar Soup

  1. Heat oil in kadhai. Fry garlic and onions. Once onions start changing color and become translucent, add celery and broccoli.
  2. In another pan, add butter and oil. Once butter melts, add the flour. Keep stirring continuously and let it cook for about couple of mins.
  3. Add warm milk little by little with continuous stirring. Slowly when it starts becoming pasty, add the remaining milk. Add stock/water to required soup consistency.
  4. Add this sauce to the vegetables and cook on low heat. Bring it to a simmer and let the soup thicken. Add all dry seasonings. Adjust any seasoning according to taste.
  5. Turn off the gas and add grated cheese and let it melt in the soup. Serve warm with toasted garlic bread or rice.
