ABOUT Pumpkin Scones RECIPE

This is an amazing recipe of Scones. Scones are like soft biscuits that are either sweet or savory and make a great breakfast option. Serve them with soft cream cheese or jams or any dipping sauce. Adding whole wheat is personal choice. These are rather dense, so going whole Wheat totally is not recommended.

Ingredients Serving: 4

  1. 1 cup whole wheat flour
  2. 1 cup all purpose flour
  3. 1 tbsp baking powder
  4. 1/4 cup packed dark brown sugar
  5. 1 large egg
  6. 1 tsp vanilla extract
  7. 5 tbsp pumpkin purée (canned)
  8. 2 tsp pumpkin pie spice
  9. 1/4 tsp nutmeg powder
  10. 1/4 tsp cinnamon powder
  11. 1/2 tsp salt
  12. 3 tbsp very cold butter cut in small pieces
  13. 1/2 cup cold buttermilk
  14. All purpose flour for dusting work surface
  15. For Glaze:
  16. 2 tbsp cold milk
  17. 1 cup powdered sugar, sifted

Instructions

  1. Preheat oven to 375 deg F (180 deg C). Line the baking tray with oven proof parchment paper.
  2. In a medium mixing bowl, combine buttermilk, egg, vanilla, pumpkin purée, and brown sugar. Whisk till it's a homogeneous mixture.
  3. In another big bowl, combine both flours, baking powder, pumpkin pie spice, nutmeg, cinnamon, and salt.
  4. Add butter to the flour and rub it into the flour with fingers until it resembles breadcrumbs.
  5. Now add buttermilk mixture and stir till its all together. Transfer the dough to flour dusted work surface.
  6. Knead it lightly 4 times with floured hands and shape in a 9 inch round form with thickness about 3/4 inches.
  7. Cut the dough in 12 equal wedges. Transfer these wedges to the baking tray.
  8. Bake for about 20 minutes or until golden in color. Once done, transfer to a wire rack to cool before glazing.
  9. Ffor Glaze, combine sugar and milk. Give it a good whisk. Pour glaze over the scones with the help of spoon and leave them aside to harden.
