ABOUT Egg Burjee RECIPE

Scrambled eggs are ever so popular as any meal though it makes a hearty breakfast. I love my eggs spicier and scrambled, hence egg burjee makes my favorite breakfast meal (at times dinner too).

Ingredients Serving: 4

  1. 8 eggs
  2. 2 small onions
  3. 2 small tomatoes
  4. 2 green chilies chopped
  5. 1/2 tsp turmeric powder
  6. 1 tsp red chilli powder
  7. 2 tbsp water
  8. 3 tbsp olive oil
  9. Salt to taste
  10. Handful of chopped coriander leaves

Instructions

  1. In a bowl, add water and tsp of salt. Whisk to dissolve salt.
  2. Add eggs and beat till all the eggs are whipped thoroughly.
  3. Heat oil in a wok. Add chilies and saute for few seconds.
  4. Add the onions and cook till they are softened and light golden in color on medium heat stirring frequently.
  5. Add tomatoes and saute till they turn mushy.
  6. Add turmeric and red chilli powders. Stir well. Cook for a minute stirring constantly.
  7. Add coriander leaves and stir.
  8. Now add the eggs and keep stirring at intervals till it starts solidifying and starts forming lumps.
  9. Switch off gas when eggs look scrambled enough with not much moisture remaining.
  10. Remove to serving bowl and sprinkle some chopped coriander leaves.
