Ingredients Serving: 4

  1. For dough ---
  2. 1cup maida
  3. 2spoon ghee
  4. Pinch of carom seeds
  5. salt as per taste
  6. water
  7. For stuffing
  8. 2spoon boil and cut potatoes
  9. 2spooon cottage cheese cubes
  10. 2spoon pomegranate seeds
  11. 2spoon boil chikpeas
  12. s2spoon turmind chutney
  13. 2spoon mint chatney
  14. 2spoon chat masala
  15. 2spoon roasted cumin powder
  16. Black salt as per taste
  17. coriander leaves

Instructions

  1. TAKE 1 CUP ALL PURPOSE FLOUR, ADD 2 TSP SPINACH PASTE, A PINCH OF CAROM SEEDS, 2 TSP GHEE
  2. ADD SALT TO TASTE, MIX WELL
  3. ADD WATER AS REQUIRED, KNEAD INTO A SMOOTH DOUGH
  4. SET ASIDE TO REST FOR 10 MINS
  5. MAKE SMALL BALLS FROM THE RESTED DOUGH, ROLL OUT INTO ROTIS
  6. COVER MUFFIN MOULDS WITH THE ROTIS, TRIM THE EXCESS DOUGH AT THE EDGES
  7. PRICK HOLES IN THE DOUGH
  8. BAKE IN A PREHEATED OVEN FOR 15-20 MINS
  9. TAKE 2 TBSP EACH OF BOILED, CUBED POTATOES & CHICKPEAS, POMEGRANATE SEEDS
  10. ADD 2 TBSP EACH OF CUBED COTTAGE CHEESE & CUCUMBER, TAMARIND CHATNEY
  11. ADD 2 TBSP MINT CHUTNEY, ROCK SALT TO TASTE, 2 TSP CHAT MASALA & ROASTED CUMIN POWDERS
  12. ADD 2 TBSP CHOPPED CORIANDER LEAVES, TOSS GENTLY
  13. FILL THE READY FILLING INTO THE COOLED SPINACH BASKETS
  14. SERVE IMMEDIATELY
