ABOUT Cheddar and Corn savory cake RECIPE

An easy to make savory cake, different from usual sweet cakes made using polenta and cheddar cheese. Nutrients from corn and loads of cheddar cheese makes this recipe a crowd pleaser. Can be served with tea/coffee or works well as a side dish too. I learnt this recipe from my sister who makes this quite often.

Ingredients Serving: 6

  1. All purpose flour - 100 gms
  2. Polenta - 100 gms
  3. Baking Powder - 1 tbsp
  4. Salt - a Pinch
  5. Grated Cheddar Cheese - 115 gms
  6. Eggs - 2 (beaten and at room temperature)
  7. Milk - 300 ml
  8. Butter (melted) - 50 gm plus extra for greasing

Instructions

  1. Boiled cornmeal porridge that can be easily made at home using cornmeal, boiling water, salt and butter. Just bring water to full boil, add in cornmeal, salt and mix well. Remove from flame, add butter and mix nicely until butter melts fully. Polenta is ready.
  2. Grease a loaf tin with butter and line it with a parchment paper. Keep aside. Preheat oven to 200 degree centigrade.
  3. In a mixing bowl sift in all purpose flour, baking powder, salt and mix well.
  4. Now add in the polenta, grated cheddar cheese and combine well.
  5. In another mixing bowl beat the eggs, add in milk and melted butter. Whisk it well.
  6. Make a well in the centre of the dry mixture and slowly incorporate the milk, eggs and butter mixture, whisk well until you get the batter.
  7. Pour the prepared batter into the greased and lined loaf tin.
  8. Bake it in a preheated oven at 200 degree celsius for about 40 to 45 minutes or until it turns golden brown from the sides.
  9. Once done, cool it for a while in the tin and then turn it out from the tin and let it cool completely before serving. It can also be served warm with some grated cheddar cheese on the top.
