Ingredients Serving: 2

  1. For the Mexican paste:
  2. 3 basil leaves
  3. 3 chopped celery
  4. 1 tsp green chillies and salt
  5. 1 cup water
  6. For the Enchiladas fillings:
  7. 2 tbsp olive oil
  8. 1 cup chopped green capsicum
  9. 2 tbsp mexican paste
  10. 3 cups boiled kidney beans
  11. 1 tsp salt
  12. 1 tbsp red chilli sauce
  13. Guacamole dip:
  14. Sour cream:
  15. For Taco shells:
  16. 3 cups maize flour
  17. 1 1/2 cup All purpose flour
  18. 1 tsp Salt
  19. 2 tsp carom seeds (ajwain)
  20. 1 tbsp oil
  21. 3 cups of Water
  22. Oil to deep fry
  23. For vegetables:
  24. 1 cup iceberg lettuce
  25. 1 cup purple cabbage
  26. 1 1/2 cup red, green and yellow bell peppers
  27. 1/2 cup jalapenos
  28. 1/2 cup black olives
  29. 1 cup processed cheese

Instructions

  1. Mexican paste: Add all the ingredients into a mixing jar and make a smooth paste.
  2. Enchiladas filling: In a frying pan add oil, green capsicum, 2 tbsp mexican paste, boiled kidney beans, salt, red chilli sauce and mix it well.
  3. Guacamole dip: Scoop the avocado and add it into a mixie jar, add jalapenos, green chillies, salt and mix it.
  4. Sour cream: In a jar add curd, fresh cream, parsley, salt and chilli flakes and mix it.
  5. Tacos shells : In a mixing bowl add maize flour, all propose flour, salt, carom sheeds, oil and knead the dough
  6. Take a small portion and roll it out. Now in a frying pan, using tongs fold one of the edges of it to make taco shapes. Fry it till it is crispy.
  7. Taco plating: Take one taco shell, add enchiladas filling, vegetables, guacamole dip, olives, jalapenos, sour cream and cheese on top.
  8. Serve immediately.
