Chhole kulche is a traditional breakfast in Delhi NCR. If you are in Delhi, then you will find it on every 3rd corner. It is really spicy and delicious.

chickpeas 1 Cup
onion 1
tomatoes 2
Green chilies 2
oil 2 tbsp
Green coriander 2 to 3 tbsp
cumin seeds ½ tsp
asafoetida ½ pinch
Red chili powder ¼ tsp
Garam masala ¼ tsp
salt 1 tsp or to taste
Refined flour 2 cup
oil 2 Tbsp
Dry fenugreek leaves 1 Tsp
Baking Soda 1 Tsp
salt 1/2 Tsp
sugar 1 Tsp
Instructions
Soak chickpeas for overnight.
In the morning drain excess water and keep only 1 cup of water.
Now transfer it into the cooker and add 1 Tsp baking soda.
Cook for 2 whistles and turn off the flame.
Till pressure releases chop the tomatoes and other vegetables finely.
when pressure releases let them a little bit cool.
Mix all the vegetables and spices into boiled chickpeas.
Chhole are ready.
In a big bowl add refined flour, salt, sugar, oil and baking soda.
Make a super soft dough with it.
Grease the dough with oil and cover the bowl with lid.
Keep it aside at a warm place for 4-5 hours.
After 4-5 hours it will be double in size.
Make medium size ball with the dough.
Roll the balls with help of rolling pin in thick size.
Heat a tawa on medium flame.
Sprinkle some fenugreek leaves on rolled kulcha.
Sprinkle some water on it.
Put the kulcha on tawa from the side of the water.
cover it with lid.
After 2-3 minutes it will be golden brown.
Flip the kulcha and roast it from another side.
Make a coating of butter.
Add some extra butter on kulcha and serve with chhole.
