Nice soup for a light dinner or even when you like having a light snack

Ingredients Serving: 3

  1. Mushrooms - 250 gms
  2. Chopped onions - 3 no.s
  3. Pepper corns 10-12
  4. Garlic cloves chopped - 4
  5. Almonds - 5
  6. Butter - 2 tbsp
  7. Milk - 1.5 cup
  8. Cream - 3 tbsp
  9. Salt - as per taste

Instructions

  1. Let's get our ingredients together first. I have used almonds that had been soaked and removed its skin. You can even use the whole almonds as it is.
  2. In a deep pan on medium heat take the butter into this add the pepper corns and garlic. Saute this very well until the garlic starts turning brown.
  3. Now add the almonds and cook for another 2 mins.
  4. It's time to add the onions.
  5. Cook the onions until they turn nice pink and translucent.
  6. Now it's time to add the mushrooms, we will add 3/4th of the finely chopped mushrooms.
  7. Cook this mushrooms until all the moisture drys out and it turns nice light brown. Let this cool for about 5 mins.
  8. After the mixture cools down take make a paste of it. If needed you can add about 3 tbsp of water while grinding.
  9. Now in the same pan on medium heat take milk and add the mushroom paste into it.
  10. Mix it well. Simmer and bring it to boil.
  11. When it starts boiling add the remaining mushrooms and salt.
  12. Let it boil very well finally add the cream and remove from flame. The soup is ready to be served.
