ABOUT Mushroom Cheese and Herb Bread RECIPE

Mushroom Cheese and herb bread has a wonderful combination of flavours. Serve it in breakfast or brunch or with soups and stews or just plain. It also goes well with a bowl of salad as well. It is a delicious quick bread. Your home will smell heaven while it is baking.

Ingredients Serving: 6

  1. 2 ½ cups all- purpose flour
  2. 2 teaspoons baking powder
  3. 1 teaspoon baking soda
  4. 2 teaspoons salt
  5. 1 teaspoon freshly ground pepper
  6. 1 teaspoon dry mustard powder
  7. ½ teaspoon garlic powder
  8. 2 ½ teaspoons Italian spice mix
  9. 100 Gms (five 20gms cubes) grated cheddar cheese
  10. ¼ cup grated parmesan cheese
  11. 2 large eggs
  12. 1 cup buttermilk (or more)
  13. 2 tablespoons olive oil
  14. 3 small onions chopped finely
  15. ½ cup finely chopped mushrooms
  16. 1 mushroom sliced lengthwise

Instructions

  1. Preheat oven to 180 degrees C. Grease and line one 9x5 inch loaf tin.
  2. In a large deep bowl, whisk together all-purpose flour, baking powder, baking soda, 1 ½ teaspoon salt, pepper, mustard, garlic powder and 2 teaspoons Italian spice mix. Add the grated cheese (both) to flour mix. Stir well.
  3. In another bowl, beat eggs. Add buttermilk and oil and beat for a minute until well combined.
  4. Make a well in the center of the flour mixture. Pour wet ingredients. Stir till well combined. Fold in onions and mushrooms.
  5. Scrape the batter into the prepared pan and level with the back of the spoon.
  6. Sprinkle ½ teaspoon salt and herbs on top. Arrange pieces of sliced mushrooms on top
  7. Bake for 55 minutes to 1 hour or until the top turns golden and a skewer inserted in the center comes out clean. If the top begins to brown too much, cover with a foil.
  8. Remove from oven after 5 minutes. Invert on the rack to cool. Slice when cold.
