ABOUT Cottage Cheese Pancakes RECIPE

Cottage cheese pancakes are such a delicious and fluffy alternative to your usual pancakes. Otherwise known an Syrniki, this delight of a breakfast staple is stuffed full of chocolate and drizzled over with fresh strawberry coulis. I followed the recipe of Jovita from Yummy Addiction

Ingredients Serving: 4

  1. 500 gm cottage cheese, well-drained (I made it at home, you can buy it too)
  2. 2 Eggs
  3. 4 tablespoons sugar
  4. ¼ teaspoon salt ½ teaspoon vanilla extract
  5. 1 cup plus 2 tablespoons (140 g) all-purpose flour
  6. ½ teaspoon baking powder
  7. Your favorite chocolate, chopped
  8. ½ cup flour, for dusting
  9. Butter or oil, for pan frying (I used butter of course)

Instructions

  1. To make the pancakes: Mix the sifted flour, baking powder and salt. Set aside.
  2. Blend together the cottage cheese, eggs, sugar, and vanilla in small food processor just until cheese is almost smooth. Add the dry ingredients to the wet and stir with a spatula just until combined. The mixture will be very sticky.
  3. Heat 2 tablespoons of butter or oil in a nonstick skillet on low-medium heat. Make sure that the oil is hot enough before you start frying the pancakes, but not smoking.
  4. Using a medium cookie scoop, scoop a ball of dough. Then place the chocolate bar inside the scooped ball of dough, and put it directly on the flour.
  5. Sprinkle flour over the top of the ball. Continue the process with the rest of the dough, until it’s all gone. You should get about 7-8 balls.
  6. Lightly pat on the balls to remove the excess flour. Then flatten the ball with your palm to make it into a patty and place it in the skillet.
  7. Fry both sides on low-medium heat until golden brown then place on paper towel to remove any excess oil.
  8. Dust the pancakes with powdered sugar and serve with strawberry coulis and garnish with some freshly cut strawberries.
