Ingredients Serving: 2

  1. Rolled oats 1 cup
  2. Small onion finely chopped 1
  3. Green chillies slit 2
  4. Finely chopped capsicum 2tbsp
  5. Finely chopped carrot 1 tbsp
  6. Finely chopped beans 1tbsp
  7. Lemon juice 1 tsp
  8. Sugar 1/2tsp
  9. Salt to taste
  10. Water 1 1/2 cup
  11. Grated ginger 1/2 tsp
  12. Oil 2 tsp
  13. Mustard seeds 1/2tsp
  14. Heeng (optional) 2tsp
  15. Curry leaves 5-6
  16. Bengal gram/chana dal 1/2 tsp
  17. Split black gram/urad dal 1/2tsp
  18. Chopped coriander leaves for garnishing


  1. Heat a pan on low medium heat. Add rolled oats and dry roast till it get slightly brown in colour. Keep aside.
  2. In the same pan heat oil. Add mustard seeds, chana dal and urad dal. Fry till mustard seeds splitters.
  3. Now add heeng, onion, curry leaves, green chillies and ginger. Saute till onion turns light brown in colour.
  4. Meanwhile in another pan, add 1 1/2 cup water, carrots, capsicum and beans. Let it boil for 2-3 minutes.
  5. Now add roasted oats to the tempering and mix it well. Then add boiled veggies along with water, keep stirring.
  6. Add salt, mix well. Cover with a lid and cook for 3-4 minutes on low flame.
  7. Later add lemon juice, sugar and coriander leaves.
  8. Enjoy vegetable oats upma when hot.
  9. I have relished it with yummy strawberry shake.
