ABOUT Garlic Knots RECIPE

Garlic Knots are soft yeasty buns that brings that extra zing to the breakfast. When not in mood for any sweetness in my breakfast but still want my bread, then I always rely on garlic to bring that spice in my bread. These taste great with chipotle mayonnaise too.

Ingredients Serving: 4

  1. 1-1/2 cup whole wheat flour
  2. 1-1/4 cup all purpose flour
  3. 1 tsp salt
  4. 1 tsp honey
  5. 2 tsp active dry yeast
  6. 1 tbsp oil
  7. 1-1/4 cup warm water (110-120 deg F)
  8. Garlic butter:
  9. 1/4 cup butter softened
  10. 3-4 finely minced garlic cloves
  11. 1/2 tsp Italian herb seasoning
  12. 1 tsp dried parsley
  13. 1/2 tsp garlic powder
  14. 1/2 tsp onion powder

Instructions

  1. For garlic butter, combine all the ingredients together and give a good whisk.
  2. Warm water in microwave for a minute (finger dipped in water should feel the warmth).
  3. In a large mixing bowl, combine yeast and honey. Add 1 cup warm water and mix well to dissolve yeast. Leave it aside to bloom and froth.
  4. Add oil and salt to the yeasty water.
  5. Add flour 1/4 cup at a time and mix with a wooden spatula. Gather the flour together to form a ball. If the dough is looking still dry, add little warm water at a time to make a soft, pliable and elastic dough.
  6. Transfer the dough to a clean flour-dusted kitchen counter/work station. Knead the dough with the palms of your hands for at least 10-15 minutes. Make a round ball shape.
  7. Oil the dough as well as oil another large mixing bowl. Transfer the dough to the bowl. Cover it with clean kitchen napkin and place the bowl in a warm area to rise for at least an hour.
  8. After an hour, punch down the doubled in size dough to release air. Gather it again in a ball. Flatten it and then cut it in 8 equal sized wedges with a sharp non-serrated knife.
  9. Roll each wedge in a long rope. Take the two ends of the rope and tie in a shoe lace first knot.
  10. Then taking the end which is inside the hole, pull it out and overlap it over the circle and bring the other end close to it and pinch it to seal the ends.
  11. Preheat oven to 400 deg F (200 deg c). Line a baking tray with ovenproof parchment paper.
  12. Place the Knots on the tray and cover with kitchen napkin to rise for the second time, at least 30-45 minutes in a warm place.
  13. Bake in oven for 20-25 minutes or until golden in color rotating the tray once midway through baking time.
  14. Remove from oven and brush the Knots with garlic butter. Place the tray back in the warm oven for couple of minutes to get a great shine.
  15. Transfer them to a wire rack to cool. Serve warm.
