ABOUT Bajra and mixed vegetable khichdi RECIPE

Haryana and Rajasthan Breakfast special Bajra and mixed vegetable khichdi is very healthy, gluten free, high energy, source of fiber, protein and phosphorus very tasty and yummy also. I learn it from my grandma and also from my mother. Taste of her hand always same from childhood to young.

Ingredients Serving: 4

  1. 1 and 1/2 cup bajra
  2. 3/4 cup yellow moong dal
  3. 1/2 tsp turmeric powder
  4. 1 onion cut in julien
  5. 1/2 tsp mustard seeds
  6. 1/2 tsp cumin seeds
  7. 1/4 tsp asefotida
  8. 1 tsp red chilli powder
  9. 10. 1 tsp ginger garlic paste
  10. 1 tsp corriender powder
  11. Salt as per taste
  12. 1/2 tsp garam masala powder
  13. 1 bowl chopped mixed vegetables ( potato, cauliflower, carrot, green peas, french beans)
  14. 1/2 cup nicely chopped tomato
  15. 2 tbsp desi ghee (extra for pouring over the top)
  16. Lemon wedges for serving
  17. Fresh chopped corriender

Instructions

  1. Wash and soak the bajra for atleast for 4 hours
  2. Wash and soaked yellow moong dal for 30 minutes
  3. Take soaked bajra, yellow moong dal and salt in a pressure cooker and wait for 4 to 5 whistle till bajra and moong dal completely cook, when done switch of gas and keep aside
  4. Other side heat ghee in a kadhai, first add cumin and mustard seeds when slupter add hing and julien onion and saute till translucent
  5. When done add ginger garlic paste, turmeric powder, red chilli powder, Corriender powder, some salt and stir
  6. Now add chopped tomato and cook till it's soft
  7. Now add chopped vegetables and cook on low flame
  8. When done add garam masala and stir in low flame
  9. When vegetables completely cook add bajra and yellow moong dal mixture, mix it till vegetables and bajra, dal mixture combine well and cook on low flame for 3 to 4 minutes, when done switch of gas
  10. Now transfer in serving plate, sprinkle some chopped corriender, and fried brown onion, and pour some desi ghee over the top at time to serve
  11. Serve hot with lemon wedge, papad, dahi and achaar for more taste
