ABOUT Savory Corn Waffles RECIPE

I have never made waffles at home and I just blindly whisked up my own vegetarian savoury waffle recipe. Next on my list is crispy potato waffles for myself and chicken for my daughter. This spicy and filling corn and pepper stuffed waffle can be eaten as a starter or at breakfast or dinner, especially in summers. You can serve the waffles on a bed of lettuce, chopped cucumber, tomatoes, diced onions, red pepper flakes or any sauce. You can add mixed herbs, cheese or spices to the batter if you wish. I like a little spice and served the Savory Corn Waffles with chilli garlic and Sriracha sauce. Yes, these waffles are made with refined flour but I am going to try with whole wheat or mixed grain and yes the sweet ones too with the sinful combo of strawberries and cream!

Ingredients Serving: 4

  1. 1 egg separated  1 cups warm milk  2 tbsp butter, melted  1 tsp sugar  ¾ cup cornflour  ¾ cup all-purpose flour, maida  2 tsp baking powder  1 tsp salt  1/2 cup corn boiled 1 spoon red pepper chopped 1 spoon yellow pepper chopped 4 cherry tomatoes 1 lemon diced 1 fried egg optional

Instructions

  1. Sift the cornflour, flour, baking powder and salt in a bowl. Add the yolk, milk, butter and sugar. (If you are lactose intolerant then you can use fresh buttermilk instead of milk) Stir to make a smooth batter.
  2. Add the boiled corn and the chopped peppers. Now fold in the egg whites and your batter is ready. Cover the batter and keep aside.
  3. Meanwhile, heat your waffle iron and grease it with a little butter. Scoop a ladle of batter into the waffle maker once it is hot. It took me 15 minutes to get crisp golden brown waffles.
  4. I like my waffles real crisp and I grilled them in the oven for 4 minutes to get the crisp texture. Make more waffles with the remaining batter and serve on a bed of spinach or lettuce leaves garnished with cherry tomatoes.
  5. Easy waffles are ready to eat.
  6. A generous spread of tomato garlic chilli sauce and a dash of lime gave my Savory Corn Waffles it a fresh lemony tang. Waffling days are here!!
