ABOUT Cronuts & cruffins - A hybrid breakfast! RECIPE

How about a breakfast with all our English buffet menu by making a cross between the favourite english breakfasts which is the western world current craze . (Cronuts- crossaint + donuts) ( Cruffins : muffins + crossaint) with a glass of milk and fruit is a complete hybrid breakfast

Ingredients Serving: 4

  1. CRUFFINS :
  2. Butter for mixing 1 3/4tbsp
  3. Butter 80gms for layering
  4. Luke warm water 1/4cup + 4tsp
  5. Yeast 1tsp
  6. sugar 1tsp
  7. Flour 150 + 1tsp
  8. Egg wash 1/2 egg + 1/2tsp sugar
  9. CRONUTS
  10. Butter 3 + 3 tbspp
  11. Flour 225 gms
  12. Egg 1/2
  13. Vanilla 1/2tsp
  14. Milk 1/4cup
  15. Sugar 1 1/2 tbsp
  16. Yeast 1 .1/4 tsp
  17. Melted butter 1tbsp
  18. Warm water 1/4cup
  19. Oil for frying

Instructions

  1. FOR CRONUTS :
  2. For all the below steps dust with flour and keep the butter out at least 3 hours prior in cold areas
  3. Take a stand mixer bowl or normal mixing bowl
  4. In that Activate yeast with sugar and warm water till it starts becoming frothy
  5. Then add salt, milk, melted butter,vanilla essence,egg
  6. Mix all the ingredients with whisk till combined
  7. Attach with stand mixer and add flour
  8. Run it slow for 2 minutes or till combined
  9. If doing by hand start adding flour and knead till combines and have a light sticky dough
  10. Cling wrap Let it rest for 25 minutes at refrigerator
  11. Then roll out to a rectangle
  12. Imaginarily draw 3 lines vertically across the rectangle sheet
  13. Add 3 tbsp or half of room temperature butter in the middle
  14. Fold one thirds inside and spread the remaining half butter
  15. Then close that with empty last thirds like a book fold
  16. Cling wrap and refrigerate it for 30 minutes till butter settles
  17. Take out and perform another book fold by rolling it 1/4inch thick sheet
  18. Refrigerate again for 30 minutes
  19. and perform 2book folds continuously this time
  20. Cling wrap and refrigerate it for 2.30 hours
  21. Now roll the sheet again to 3/4inch thick and cut it into donut rings and holes
  22. Let it rest in a warm place till it rises or for about 2 hours in dusted butter paper
  23. Make sure the place is not too warm or the butter will melt and doesn't give rise
  24. Then lastly take out and get in medium hot oil on top and bottom sides till golden
  25. Stuff and garnish with your favourite frosting or simple cinnamon sugar glaze
  26. FOR CRUFFINS :
  27. Activate yeast with sugar, warm water , and yeast
  28. Then add flour and knead well till starts to combine
  29. Then add soft butter for mixing and combine well
  30. if using stand mixer combine for approximately 3 minutes and mix at medium speed for 10 minutes
  31. Then knead well till the dough is really really smooth and pliable
  32. Take out ,cling wrap and rest it for 1hour
  33. The dough would have rised a bit
  34. Now divide the dough into two equals portions
  35. Also divide the remaining butter into two equal portions
  36. Take one portion and roll it really thin without tearing into rectangle
  37. Take the soft room temperature butter and start applying on the sheet fully
  38. And start rolling tightly like a cigar such that at the end you get like a pipe long crossaint log
  39. Take a flour dusted knife and start diving it vertically
  40. Again dust knife well and cut it fully
  41. And divide them into two
  42. One can see the layers inside now
  43. Keeping in mind roll them by having the layered side on top visible
  44. Pat it and adjust with your palm corners and place it in a dusted muffin tray
  45. Repeat the same for remaining portion
  46. Not to forget While making these thin sheets dust both sides well with flours
  47. Let them raise in warm place for 2 to 3 hours
  48. Then have a egg wash with little sugar added in them and brush over it
  49. Bake at 200c preheated oven for 30 minutes or till golden on top
  50. Fill with favourite frosting or simple sugar dust
