A very tasty and famous food from Maharashtra....This you can have at any time... As a snack as breakfast....Here I have added brinjals as my daughter doesnt like it and she didnt come to know I added it here....:grinning:

Ingredients Serving: 4

  1. Potatoes- 5 boiled
  2. Brinjal - 5 washed and cut into small cubes(optional)
  3. Onion- 1 finely chopped
  4. Green chillies- 2 finely chopped
  5. Garlic - 1 tbspn finely chopped
  6. Ginger- 1 inch piece finely chopped
  7. Curry leaves- few
  8. Mustard - 1 tspn
  9. Turmeric powder- 1/2 tspn
  10. Red chilly powder- 1/2 tspn
  11. Hing- 1/4 tspn
  12. Coriander leaves- 1 tbspn finely chopped
  13. Salt to taste
  14. Lemon juice - a few drops
  15. Oil- 2 tbspn

  17. For the vada batter
  18. Besan - 1 & 1/2 bowl
  19. Rice flour- 2 tbspn
  20. Turmeric powder- 1/2 tspn
  21. Hing - 1/4 tspn
  22. Cooking soda- 1/4 tspn
  23. Water as per requirement
  24. Salt to taste
  25. Oil for Deep frying

Instructions

  1. Heat a pan and add oil in it... Then add mustard seeds and hing...
  2. Then add curry leaves,finely chopped garlic, ginger and green chilly....Fry for a minute
  3. Then add finely chopped onion and dry for 2 minutes...
  4. Then put turmeric powder and mix well
  5. Then add the washed and chopped brinjal pieces ....And close it with a lid and let it cook
  6. Then add the boiled potatoes in it
  7. Put salt and mix well
  8. Then put lemon juice and finely chopped coriander leaves
  9. Switch off the gas and let it cool down.
  10. Now we shall make the vada batter.... In a bowl put the besan and all other dry ingredients
  11. Put required water and make a thick batter
  12. Make small balls of the cooked potatoes and brinjal mix
  13. Now one by one dip each ball in the besan batter such that it gets coated well
  14. Heat oil in the mean time
  15. Now put the besan coated balls in the hot oil an fry them well till crisp
  16. Remove them on an absorbent paper...
  17. Now serve hot with pav or bread and green chutney , dry peanut garlic chutney and fried green chilly. Slit the pav apply little green chutney and peanut chutney....Keep the vada inside and then close it...
