Its our family favorite chutney goes well with rice,idli ,dosa and roti

Brinjal Chutney

Ingredients to make Brinjal Chutney

  • Brinjal-250 gram,finely chopped
  • onion-1,finely chopped
  • tomato-1,finely chopped
  • Slit green chillies-3
  • turmeric powder-1/4 tsp
  • tamarind-1 gooseberry size
  • Thick coconut milk-1/4 cup
  • salt- To taste
  • coriander leaves-2 tbsp, finely chopped
  • To temper :
  • oil -2 tsp
  • mustard seeds-1/4 tsp
  • urad dal - 1/4 tsp
  • hing -1/8 tsp
  • Red chillies-2
  • curry leaves-1 sprig

How to make Brinjal Chutney

  1. Soak the Tamarind in hot water and extract the thick 1/4 cup pulp
  2. In a pressure cooker add the chopped onion, tomato, brinjal, green chillies, turmeric powder and 1/4 cup water.
  3. Cook it upto 4 whistles. Once the pressure settled down,Mash it well
  4. Then add Tamarind pulp and salt. Boil it until Raw smell goes away.
  5. Finally add the coconut milk and switch off the flame.
  6. Then heat oil in a kadai ,temper with mustar seeds, urad dal,hing, curry leaves, red chilli.
  7. Poured it on the chutney and mix it well.Garnish with chopped coriander leaves.
