About Chicken Macroni Soup Recipe

Simple soup with pasta makes a wholesome meal by itself. Ladle it in the buns and make it more interesting while serving it to guests.

Chicken Macroni Soup

Ingredients to make Chicken Macroni Soup

  • 1 pack mini Kaiser buns (or any soft bun)
  • 3/4 cup Macaroni
  • 1-1/2 cup shredded cooked chicken
  • 1/2 cup sliced petite carrots
  • 2 celery stalks
  • 1 small onion chopped
  • 1 green chili slit
  • 1 tsp garlic powder
  • 1 tsp tabletop seasoning (like Mrs. Dash/McCormick)
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 Tsp Dried Basil
  • 2 tbsp olive oil
  • 2 tbsp cornflour mixed in 4 tbsp water

How to make Chicken Macroni Soup

  1. Heat oil in a deep pot. Add onions, carrots, and celery.
  2. Stir fry for couple of minutes or till onions turn translucent.
  3. Add the broth and green chili and bring the broth to a boil.
  4. Add the macaroni along with the remaining ingredients. Cover with lid and let soup simmer on low heat.
  5. Once the macaroni is cooked, pour in the cornflour slurry.
  6. To assemble the soup–Cut a small piece of bread from the center of the bun. Carefully remove the bread inside to create a hollow.
  7. Pour soup in the hollow and serve hot with a breadstick on the side, if preferred.

My Tip:

For shredded chicken, boil boneless chicken in water with bay leaf, ginger, garlic, salt, and peppercorns. Shred the chicken after straining the liquid and discarding the remaining ingredients.
