Ingredients Serving: 6

  1. 1 cup finely chopped pumpkin
  2. 8 tablespoons grated Parmesan cheese
  3. 1/2 cup white flour
  4. 1 teaspoon dry rosemary
  5. 1 teaspoon fresh or dry Powdered thyme
  6. Salt and pepper to taste
  7. 2 medium eggs

Instructions

  1. Chop the pumpkin in a large bowl mix the flour with 2 beaten eggs.
  2. Stir well to get rid of all the flour lumps, then add all the other ingredients.
  3. The mixture might look a bit unpromising at first but keep going you will end up eating delicious fritters.
  4. In a large nonstick pan heat heat oil to fry when the oil is hot, scoop a tablespoon of mixture in the pan.
  5. Cook for 2-3 minutes each side or until golden. Serve hot.
