Ingredients Serving: 4

  1. 1 mashed banana
  2. 1 2/3 cups granulated sugar
  3. 2 tsp. oil
  4. 1/2 cup Yoghurt
  5. 3/4 cup pumpkin puree
  6. 2 cups flour
  7. 2 tsp. baking powder
  8. 1 tsp. ground cinnamon
  9. 1/4 tsp. all spice powder
  10. 1/2 cup cream cheese, softened
  11. 1/2 cup butter softened
  12. 2 cups sugar
  13. 1 tsp vanilla essence

Instructions

  1. Preheat the oven and grease a baking pan. Using mixer, combine mashed banana, sugar, oil, yoghurt and pumpkin until light and fluffy.
  2. Stir together the flour, baking powder, cinnamon, all spice and salt.
  3. Add the dry ingredients to the pumpkin mixture and mix at low speed until combined thoroughly and the batter is smooth.
  4. Spread the batter into greased baking pan and bake for 40 minutes or until a toothpick inserted into the centre almost comes out clean. Let cool completely before frosting.
  5. Combine the cream cheese and the sugar and mix until combined. Stir in the vanilla and mix again.
  6. Spread on cooled pumpkin bars.
