ABOUT Mushroom Soup RECIPE

This is a ridiculously easy soup to make. It's tasty and durable, and it gets even better overnight.

Ingredients Serving: 4

  1. 75 grams butter
  2. 1 small onion diced finely
  3. 340 grams button mushrooms
  4. 900 mili litres chicken/vegetable stock
  5. Salt to season
  6. freshly crushed black pepper to season
  7. 4-6 fresh parsley leaves


  1. In the medium saucepan, melt 2 tablespoons of the butter over medium heat
  2. add the onion. Cook until the onion is soft and translucent
  3. then add the mushrooms and the remaining butter
  4. Let the mixture sweat for about 8 minutes, taking care that the onion doesn't take on any brown colour.
  5. Stir in the chicken stock, parsley and bring to a boil.
  6. Immediately reduce the heat and simmer for about an hour.
  7. After an hour, remove the parsley and discard.
  8. Let the soup cool for a few minutes, then transfer to the blender and carefully blend at high speed until smooth.
  9. When blended, return the mix to the pot, season with salt and pepper, and bring up to a simmer again.
  10. transfer to serving bowls and serve warm with your choice of breads
