Back to baking with healthy Nankhatai, a classic treat that always puts anyone in a good mood! This time, I skipped the usual Maida and used Ragi Sprouted Flour, Besan and Museli Oats to give them a healthy twist. Also with lesser sugar and butter, it's a bit more crispy yet melts in the mouth instantly. A slight bitter aftertaste is an unusual surprise in the end. But, that doesn't take away from the charm of it. In fact, gives you something new to relish with each bite. :heart:️:yum:

Ingredients Serving: 3

  1. Ragi sprouted Flour 1/2 cup or 60 grams
  2. 1/4 cup or 20 grams gram flour (Besan)
  3. 1/8 Cup museli oats
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon cardamom powder (Choti Elaichi)
  6. 2 teaspoon Ghee
  7. 1/4 or 40 grams sugar powdered
  8. 50gms Butter
  9. Milk as required
  10. Cashews to garnish


  1. In a bowl, add the Ragi Flour.
  2. Add Besan.
  3. Add baking powder.
  4. Grind some museli oats dry and add to the mixture.
  5. In a separate bowl, add the butter and Ghee to the powdered sugar.
  6. Whisk it completely so that it becomes light and creamy.
  7. To this, add the flour mixture as well as Elaichi powder.
  8. Start mixing it together. Add some milk accordingly as binding agent.
  9. Do not knead very hard. Make a soft dough.
  10. Make small round balls by rolling them by hand. Insert cashew nuts on top.
  11. Bake in the oven at 180 degrees for 30 mins.
  12. Let them cool for 15-20 mins.
