Ingredients Serving: 4

  1. for koftas:-
  2. chicken paste 400 gram
  3. 2 tbsp chopped onions
  4. 1 teaspoon finely chopped Ginger
  5. 1 teaspoon finely chopped garlic
  6. 1.5 teaspoon black pepper powder
  7. 2 tablespoons soaked Dahlia paste
  8. 2 tbsp white oil
  9. salt to taste
  10. for red gravy:-
  11. 2 tablespoons white oil
  12. 2 grams cinnamon
  13. 4-5 cloves
  14. 2 tbsp ginger garlic paste
  15. 2 tomato puree
  16. 1 tablespoon red chili powder
  17. one teaspoon turmeric powder
  18. 1 teaspoon cumin powder
  19. half teaspoon coriander powder
  20. 1 tablespoon Kashmiri red chilli powder
  21. salt to taste
  22. 100 ml water
  23. For kofta stock:-
  24. 300 ml water
  25. 2 teaspoon curd
  26. one teaspoon fennel seed powder
  27. half teaspoon black pepper powder

Instructions

  1. TAKE 100 GMS CHICKEN PASTE, ADD 2 TBSP CHOPPED ONION, 1 TSP EACH OF CHOPPED GINGER & GARLIC
  2. ADD 1/2 TSP PEPPER POWDER & SALT TO TASTE, MIX & SET ASIDE FOR 20 MINS
  3. TAKE 300 GMS CHICKEN PASTE, ADD 2 TBSP SOAKED BROKEN WHEAT / DALIYA PASTE
  4. ADD 2 TSP OIL, SALT TO TASTE, 1 TSP PEPPER POWDER, MIX WELL & SET ASIDE FOR 20 MINS
  5. TAKE 2 TBSP CHICKEN-DALIYA MIX, FLATTEN IT, PLACE A SMALL BALL CHICKEN-ONION MIX ON TOP, CLOSE
  6. PUT THE STUFFED KOFTAS IN HOT WATER
  7. ADD 2 TSP CURD
  8. ADD 1 TSP FENNEL SEED POWDER
  9. ADD 1/2 TSP PEPPER POWDER, BRING IT TO A BOIL
  10. REMOVE THE KOFTAS, SET ASIDE
  11. HEAT 2 TBSP OIL, ADD 2 CINNAMON STICKS, 4-5 CLOVES, 2 TBSP GINGER-GARLIC PASTE
  12. ADD 7-8 PEPPERCORNS, SAUTE UNTIL GOLDEN BROWN
  13. ADD THE PUREE OF 2 TOMATOES, SAUTE
  14. ADD SALT, 1 TSP EACH OF TURMERIC & CUMIN POWDERS, 1 TBSP RED CHILLI POWDER
  15. ADF 1/2 TSP CORIANDER POWDER, 1 TSP KASHMIRI MIRCH POWDER, MIX
  16. ADD 100 ML WATER, BRING IT TO A BOIL
  17. ADD THE KOFTAS, SIMMER FOR 5-7 MINS
  18. ADD 1/2 TSP GARAM MASALA POWDER, MIX & TAKE OFF HEAT
  19. GARNISH WITH 2 TBSP FRIED ONIONS, SERVE HOT WITH ROTI / RICE
