ABOUT Spicy Szechuan Rice RECIPE

My son loves Szechuan rice and anything indo Chinese.

Ingredients Serving: 6

  1. 3 cups regular or basmati rice
  2. 1 cup carrots julienned
  3. 1 cup beans cut into thin strips
  4. 1 cup bell peppers cut into thin slices
  5. I cup onion sliced thin
  6. 2 cups cabbage sliced fine
  7. 3-4 garlic cloves chopped finely
  8. 4-5 dried red chillies
  9. Bunch of basil leaves
  10. 2 teaspoons soy sauce
  11. Salt to taste
  12. 1 spoon ghee

Instructions

  1. Cook the rice until each grain separates and is nice and fluffy
  2. Grind the dried red chillies with ginger and garlic into fine paste
  3. Take a Chinese Wok or pan and add oil
  4. When hot, sauté ginger and garlic
  5. Add onions and saute well, add the carrots, beans and bell peppers and saute, add the cabbage now
  6. Add the ground Szechuan paste and add salt
  7. Add the rice and keep flame on medium and saute till the fried rice is done
  8. Add the soy sauce and ghee and mix
  9. Chop basil leaves and decorate the rice
