Spicy Szechuan Rice

Ingredients to make Spicy Szechuan Rice

  • 3 cups regular or basmati rice
  • 1 cup carrots julienned
  • 1 cup beans cut into thin strips
  • 1 cup bell peppers cut into thin slices
  • I cup onion sliced thin
  • 2 cups cabbage sliced fine
  • 3-4 garlic cloves chopped finely
  • 4-5 dried red chillies
  • Bunch of basil leaves
  • 2 teaspoons soy sauce
  • salt to taste
  • 1 spoon ghee

How to make Spicy Szechuan Rice

  1. Cook the rice until each grain separates and is nice and fluffy
  2. Grind the dried red chillies with ginger and garlic into fine paste
  3. Take a Chinese Wok or pan and add oil
  4. When hot, sauté ginger and garlic
  5. Add onions and saute well, add the carrots, beans and bell peppers and saute, add the cabbage now
  6. Add the ground Szechuan paste and add salt
  7. Add the rice and keep flame on medium and saute till the fried rice is done
  8. Add the soy sauce and ghee and mix
  9. Chop basil leaves and decorate the rice

My Tip:

The basil leaves give a wonderful flavour to the rice.
