ABOUT Domates Dolmasi (Stuffed Tomatoes) RECIPE

Domates Dolmasi i.e Stuffed Tomatoes - large tomatoes filled with eggplant, onions and CHEESE stuffing.

Ingredients Serving: 2

  1. 2 large tomatoes
  2. Salt and fresh ground Pepper to sprinkle
  3. Extra Virgin Olive Oil to drizzle
  4. For stuffing:
  5. 1 Chinese Eggplant
  6. 1 medium Onion, chopped
  7. 2-3 garlic cloves, minced
  8. 2 tablespoons Parsley, chopped
  9. 1 tablespoon Basil, chopped
  10. 1 Teaspoon oregano
  11. 1/3 cup Feta Cheese, cut into cubes {you can even use 1/2 cup grated Parmesan Cheese}
  12. 1/2 teaspoon Freshly grated Black Pepper
  13. Salt to taste

Instructions

  1. Wash tomatoes and slice off stem ends. Gently scoop out the pulp, leaving a 1/2 inch wall.
  2. Now sprinkle the cored and seeded tomatoes with salt and place upside down to drain. Chop the pulp into small pieces and set aside.
  3. Peel eggplant using a potato peeler and cut into small cubes. Soak cubes immediately after cutting into salty water.
  4. In a saute pan heat 2 tablespoons of olive oil and add the chopped onions and garlic. Cook until translucent.
  5. Drain the eggplant pieces and squeeze the excess water.
  6. Add eggplant and tomatoes to pan and saute for about 10 minutes on medium low heat, stirring occasionally. Season the eggplant mixture with salt and pepper and remove from heat.
  7. Preheat the oven to 400 degree F.
  8. Add the remaining ingredients, i.e, parsley, basil, oregano and feta cheese cubes into the eggplant mixture and stir.
  9. Cover the stuffing with lots of Parmesan cheese.
  10. Sprinkle the hollowed tomatoes with fresh ground pepper and stuff each tomato with the eggplant mixture using a small spoon. Drizzle some olive oil on the tomatoes.
  11. Place tomatoes on a greased casserole dish or baking sheet and bake for about 30 minutes.
