ABOUT Mediterranean Seafood Soup! RECIPE

In Mediterranean countries like Spain and Italy, a major part of locals' everyday diet comprises of sea-food. Soups are especially popular, where various vegetables, spices and fresh herbs are cooked with a variety of fish and other sea-food to create a healthy and delicious meal choice. I learnt this soup in a cooking class a while ago, and it has become a beloved staple in my house now. Any time the weather is chilly and there's fresh fish or mussels in my refrigerator, this soup gets a roaring vote! interestingly this soup is very very close to the base of Paella- the famous rice dish of Spain. You can literally add the paella rice to this soup and cook it covered till the rice is done (Add mussels in the end) and I guarantee you that you will get a beautiful, authentic Paella right there in your kitchen. Give this flavorful soup a go friends. If you and your family are a fan of sea-food, you will all love it!

Ingredients Serving: 3

  1. 2-3 cloves of garlic, peeled and chopped
  2. 1 white onion, diced
  3. 1 celery stick, finely chopped
  4. 1 fillet of Salmon or seabass
  5. 1 tube of Squid, cleaned
  6. 8-10 fresh prawns, peeled and de-veined
  7. 8-10 fresh and cleaned Mussels
  8. 1 tsp Tomato paste/puree
  9. 1 tin of chopped Tomatoes
  10. 1 tsp smoked paprika
  11. A pinch of saffron
  12. 2 tbsn fresh Thyme
  13. 2-3 tbsn fresh Parsley
  14. 1 cup fish Stock
  15. Some fresh Basil leaves for garneshing
  16. Some fresh grated Parmesan cheese for Serving
  17. 3-4 Tbsn Extra virgin Olive Oil
  18. 1 tsp white sugar (optional)
  19. Salt & Pepper to taste

Instructions

  1. Cut the tube of squid in large cubes and roast in 1 tbsn hot olive-oil for 1-2 Mins. Remove from pan and keep aside.
  2. In a large pot, heat the remaining Oilve oil. Add the chopped garlic and fry for a few seconds.
  3. Add the chopped white onion and celery. Cover and cook for 4-5 minutes.
  4. Add the thyme, parsley and smoked paprika. Saute for a few seconds.
  5. Add in 1 tsp Tomato paste/puree and mix well. Cook for around 30 seconds.
  6. Pour in 1 full tin of chopped Tomatoes. Add sugar, Salt and pepper and cook covered till the oil leaves the sides.
  7. Add your fish stock and saffron. mix well. Let simmer for 8-9 minutes on low flame. In the meantime, cut your fish in large cubes.
  8. Next, add in the roasted squid, fish cubes and your shrimp/prawns to your soup. Cover and cook for 2-3 minutes.
  9. Finally, gently place your Mussels in your bubbling soup and cover for around 1-2 minutes. When they open up fully, they are fully cooked. Switch off the flame.
  10. Garnish your delicious Sea-food soup with fresh basil, parsley and lots of grated parmesan cheese. Serve hot with your favorite french bread slices. Enjoy!
