ABOUT Sweet corn prawn salad RECIPE

Sweetcorn and prawn mix with English cucumber, cerry tomatoes garlic, spicesand mustard- lemon- mayonnaise dressing.

Ingredients Serving: 4

  1. Prawns shelled deveined 1 1/2 cup ( 200 g)
  2. Vegetable oil 1 tablespoon
  3. Cooked sweetcorn 1 cup
  4. Lettuce roughly chopped 1 cup
  5. Cherry tomatoes sliced 6
  6. English cucumber sliced
  7. Green cilli finely chopped 2
  8. Garlic finely chopped 2 teaspoon
  9. For dressing 1 tablespoon mustard sauce
  10. 1 tablespoon vinegar
  11. 2 tablespoon mayonnaise
  12. 1 tablespoon lemon juice
  13. Salt as required
  14. Cilli flakes 1/2 teaspoon
  15. Vegetable oil 2 teaspoon
  16. All purpose seasoning 1 teaspoon
  17. Fresh coriander chopped handful

Instructions

  1. Clean prawns rub salt and little lemon juice and keep aside for 15 minutes.
  2. In a mixing bowl add all ingredients for the dressing- mustard sauce, vinegar, mayonnaise, cilli flakes, all purpose seasoning and mix well
  3. Heat 1 tablespoon vegetable oil and add chopped garlic and cilli.
  4. Add prawns and shallow fry.
  5. Remove oil and keep aside
  6. In a big mixing bowl take cooked sweetcorn
  7. Add prawns , lettuce, cucumbers, cherry tomatoes and mix
  8. Add the mustard sauce mayonnaise dressing and mix thoroughly.
  9. Sprinkle chopped coriander and serve.
