Ingredients Serving: 4

  1. 1 small broccoli florets chopped
  2. 25 grams French/Long beans chopped
  3. 1 onion chopped
  4. 2 garlic cloves chopped
  5. Salt to season
  6. Crushed black pepper to season
  7. 25 grams spinach chopped
  8. 100 grams gruyere/cheddar cheese grated
  9. 10 mili litre heavy creme (Optional)
  10. 1 sprig cilantro to garnish
  11. 300 mili litre vegetable:chicken stock
  12. 1 tablespoon unsalted butter


  1. Melt the butter in a pot
  2. Add and sauté the garlic and onion for 2 minutes
  3. Add the beans next and sauté for 2 minutes
  4. Add the broccoli florets followed by spinach leaves. Sauté 2 minutes after adding every ingredient
  5. Finally add the stock and bring to a boil
  6. Once on a boil, reduce heat and cook covered till the broccoli turn soft
  7. Take off heat and blend smooth using an immersion or a regular blender
  8. Turn the heat on once again and add the seasonings
  9. Mix and let the soup simmer to reduce and thicken
  10. Add the cheese and creme before taking off heat. Mix for a minute
  11. Check the seasoning and adjust before transferring to bowls
  12. Serve immediately garnished with cilantro
