ABOUT Ande ki Sabji RECIPE

It is a traditional parsee style recipe with a twist.

Ingredients Serving: 2

  1. Ghee 2 tbsps
  2. Chopped onions 4
  3. Chopped tomatoes 4
  4. Green Chilli chopped 1
  5. Eggs 6
  6. Salt to taste
  7. Turmeric pwd 1/2 tsp
  8. Red chilli pwd 1/2 tsp
  9. Maggi masala cube 1
  10. coriander leaves chopped


  1. In a pan put 2 tbsp ghee.
  2. Add chopped onions and saute till golden brown.
  3. Now put in chopped tomatoes, green chillies and again saute till tender and start leaving oil from edges.
  4. After this add salt and spices. Mix well.
  5. Spread this onion and tomato mixture evenly in the pan and then break eggs on top of this.
  6. Sprinkle little salt and red chilli pwd on all the eggs.
  7. Do not mix eggs with onion mixture. Cover and let it cook for 10 mins.
  8. Lastly garnish with chopped coriander leaves.
  9. Cut into parts and serve.
