ABOUT Mint Omelette & Potato Cake Vada RECIPE

When my dad was working in Mumbai he discovered Mumbai street style Vada Pav. On returning home, he gave his own twist to the recipe and thus this is inspired by what he made.

Ingredients Serving: 2

  1. 2 slices of bread
  2. 1 egg
  3. 1 boiled potato
  4. Handful of fresh mint
  5. Bread crumbs
  6. 1/2 sliced-diced tomato
  7. Amul cream
  8. Ghee or butter
  9. ketchup
  10. Salt

Instructions

  1. Take two slices of bread and using a round cutter or any sphere spaced utensil cut out bread in circular discs. Spread some ghee or butter on the bread slices and pan fry it on both sides till it becomes light golden in color.
  2. Potato cakes- Mash boiled potato and add a pinch of salt. Using your hands make into 2 equal cakes. Beat an egg and dip the potato cakes in the mixture and then roll it in bread crumbs. Keep aside in the fridge for 5-10 minutes.
  3. Mint Omlette- Chop tomato into tiny slices and dice mint leaves. Add to (left over) egg mixture with a pinch of salt and add 1/3 (small cup) cream and whisk. Fry mixture in ghee or butter and set aside.
  4. Presentation: Set a slice of bread on the bottom, then lay the mint omlette on top and put some ketchup on top. Place another slice of bread on top and place one potato cake on top of it, add some ketchup, add another slice of bread and put another potato cake finishing it off with another slice of bread.
  5. Garnish with a sprig of mint and chopped tomatoes to serve.
