ABOUT Raspberry Centre Sables RECIPE

Joyful union of sweet and sour marmalade filled in buttery and crumbly cookies.

Ingredients Serving: 10

  1. For sable :
  2. flour 1 cup
  3. Soft unsalted butter 1/2 cup
  4. Castor sugar 1/4 cup
  5. For raspberry jam:
  6. Raspberries 500gms
  7. Castor sugar 200gms
  8. Lemon juice 125gms
  9. Pectin 2.5 gms
  10. Water 50gms

Instructions

  1. For sable: Make a dough out of the ingredients mentioned above. And before working on it, chill it for about 2-3 hours. Cut out with cookie cutter. Bake at 180c for 14-15 mins.
  2. For raspberry marmalade: Add your sugar to a saucepan and caramalise it. Now add your raspberries and water. Cook till the mixture becomes one. Remove from heat and add pectin and lemon juice. When cooled down pour in a piping back.
  3. And fill up your cookies.
