This is a speciality of UP.. my nanis recipe, also made in Rajasthan but in a different way.

Ingredients Serving: 8

  1. 200 grams Light green colour broad chillies
  2. 4-5 tablespoon of Besan( gram flour)
  3. 1 tablespoon mustard oil
  4. 1/2 teaspoon jeera
  5. 1/2 teaspoon rai
  6. 1 teaspoon saunf
  7. 1/2 teaspoon Kalunji ( onion seeds)
  8. 1/4 teaspoon hing
  9. 1/2 teaspoon red chilli powder
  10. 1 teaspoon turmeric powder
  11. 1/2 teaspoon amchur powder
  12. 1/2 teaspoon dhania powder
  13. 1/2 teaspoon methi dana
  14. Salt to taste

Instructions

  1. Wash the chillies , wipe them and cut them into around 1/2 inch pieces.
  2. In a kadai add oil . Keep on high flame, let it burn or mustard oil smells.
  3. Now add Hing, jeera , rai , saunf , methi dada , red chilli powder, dhania powder and add the chopped chillies.
  4. Mix all the ingredients well and lower the flame. This would take 7-8 minutes.Add salt.
  5. When the chillies are soft add the besan and mix well.
  6. Cook covered for 5 minutes.
  7. Remove the lid, and on low flame itself add amchur powder. Stir on low flame for 7-8 minutes or thill we get a prominent flavour of the besan comes)
  8. Serve with food .
