ABOUT Creamy Mushroom Soup RECIPE

This is a deep earthy full flavored, easy to make healthy soup.

Ingredients Serving: 4

  1. 1/2 tablespoons olive oil
  2. 1/2 tablespoons butter
  3. 3 1/2 cups mushrooms, sliced (including mushroom stems)
  4. 1/2 large onion ( finely diced)
  5. 1 teaspoon sea salt & 1/2 teaspoon ground black pepper
  6. 3 cups Chicken Stock
  7. 1 can coconut milk (about 1 1/2 cups)
  8. 1 Tablespoon Thyme

Instructions

  1. In a large pot over medium high heat add olive oil and little butter to heat.
  2. Add the mushrooms, garlic, onion and salt and pepper. Stir together and sauté until mushrooms begin to release their natural juices. It should take around 8 minutes.
  3. Pour in the Chicken Stock and the coconut milk.
  4. Add in the thyme. Stir together and bring to a boil, then a simmer for 15 minutes.
  5. Take out two cups of soup (with some mushrooms) and pour into your blender.
  6. Pour back the blended mushroom into soup pot and blend one more time.
  7. Serve the soup and top with your favorite toppings
