ABOUT MUSHROOM SPRING ONION SOUP(NO MAIDA, NO CREAM) RECIPE

Mushrooms are high in Vitamin D, low in calories and are great sources of fiber and protein.They are also fat-free, cholesterol-free, calorie-free and very low in sodium. Moreover spring onion contains such nutrients that lowers blood sugar level, aids digestion, prevents cold & flu, maintains good vision etc. So no need to say this soup is very healthy and loaded with essential nutrients for weight-watchers and health conscious people.

Ingredients Serving: 4

  1. 300 grams mushrooms, chopped
  2. 3 Spring Onion (Bulb & Greens), root and leaves chopped
  3. Peeled Garlic cloves 4
  4. 3 cups water
  5. 1 teaspoon canola oil
  6. Salt and Pepper , to taste
  7. Maggi masala-e-magic 1 teaspoon
  8. Few Coriander Leaves freshly chopped
  9. Sesame seeds and stem of spring onion for sprinkling

Instructions

  1. To begin making the soup heat oil in a heavy bottomed pan; add garlic cloves . Saute for a minute.
  2. Now add chopped mushrooms and the spring onions and cook for 1 minute. In this way mushrooms will release a lot of water .
  3. Now lid the cooker with adding water and cook till 1 whistle.
  4. Switch off the flame and open cooker when steam releases itself.
  5. After that switch off the flame and open cooker when steam releases itself.
  6. Set aside and allow the mushroom-onions to cool for a bit before pureeing in the blender.
  7. Once the mushrooms are cooled a little, puree the mixture until smooth or chunky , its a personal choice. ( I like chunky, so didn't blend too much).
  8. Transfer the pureed mixture back to the pan and bring to a boil or cook until thickened.
  9. Adjust seasonings with adding salt , pepper and maggi masala-e-magic to suit your taste.
  10. Finally stir in the chopped coriander leaves, onion stem and sesame seeds.
  11. Serve the Mushroom-Spring Onion Soup hot.
