Ingredients Serving: 4

  1. 2 boiled potatoes
  2. 1 hard boiled egg
  3. 1/2 tomato coarsely chopped
  4. 1 onion finely chopped
  5. 1 tsp finely chopped fresh thyme
  6. 1 tsp honey
  7. 2-4 tsp red wine vinegar
  8. 1 cup good quality mayonnaise
  9. 1/2 tsp spanish olive oil
  10. 1 tsp minced garlic
  11. salt as per taste
  12. Freshly ground black pepper


  1. Combine the vinegar, honey in a small pot.
  2. Bring to a boil over high heat, immediately remove from the heat and let sit until cool to room temperature.
  3. Combine the mayonnaise and garlic in a mixing bowl and season to taste with salt and pepper.
  4. Cook the potatoes in a large pot of boiling, salted water until tender. Drain and slice 1/2 inch thick.
  5. Also boiled the egg. Peel the cut into pieces
  6. Place the boiled egg and potatoes in a large serving bowl, add all ingredients also and immediately fold in the mayonnaise mixture.
  7. Cover the bowl with saran wrap and put keep aside for at least 1/2 an hour
  8. After that remove the saran wrap and serve in small plates.
