ABOUT Chatpata Quinoa Spring Rolls with Mango Salsa RECIPE

Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

Ingredients Serving: 2

  1. For spring rolls:
  2. 1/2 cup cooked Quinoa
  3. 2 tbsp raw mango
  4. 2 tbsp Capsicum
  5. 2 tbsp carrot
  6. 2 tbsp onion
  7. 2 tbsp cabbage
  8. 1 green chilly
  9. 3 tbsp mozzarella cheese
  10. Salt to taste
  11. Chilly powder
  12. Garam Masala
  13. 4 spring roll sheets
  14. 2 tbsp Oil
  15. 4 tbsp coriander, mint and raw mango chutney
  16. For mango salsa:
  17. 2 tbsp raw mango
  18. 2 tbsp ripe mango
  19. 1 tbsp onion
  20. 1 tbsp deseeded tomato
  21. Black salt
  22. Salt
  23. Chilly powder


  1. Cook the Quinoa according to the instruction given on the packet.
  2. Finely chop all the veggies.
  3. Heat a pan, add cumin seeds, chopped veggies, cooked Quinoa, spices. Cook for 2 mins, switch off the flame, now add cheese and mix well. Stuffing is ready.
  4. Take a spring roll sheet, place the stuffing in the corner, apply nizam on the edges, now roll it and keep aside.
  5. Place these spring rolls in air fryer and cook for 7 mins on 200 degree. Now flip the rolls and cook for another 5 mins. Quinoa spring rolls are ready.
  6. For salsa, add all the ingredients in a bowl and mix well.
  7. Serve these spring rolls with mango salsa and raw mango chutney.
