Ingredients Serving: 6

  1. Mixed vegetables :
  2. Potatoes : 6 washed peeled chopped
  3. Capsicum : 2 chopped
  4. Cauliflower : 1 big chopped
  5. Water : 4 cups
  6. Onion : 2 chopped
  7. Tomatoes : 13 chopped
  8. Jeera powder : 2 tsp
  9. Red chilli powder to taste
  10. Garam masala powder to taste
  11. Coriander powder to taste
  12. Chat masala powder : 2 tbsp
  13. Salt to taste
  14. Red food color : 2 tsp (optional) i did not use it
  15. Beetroot : 3 tbsp grated
  16. Butter : 6 tbsp
  17. oil : 2 tbsp
  18. Lemon juice : 2 tbsp
  19. For garnishing :
  20. coriander leaves - a handful
  21. Onion : 1 chopped
  22. Butter : 6-7 tbsp

Instructions

  1. Take all the chopped vegetables in a cooker and add water and salt to this, close the cooker. After 5 whistles on high, switch off the gas. Let it cool. Drain the water from the vegetables and preserve the water for further use in this recipe.
  2. Heat butter and oil in kadai. Add onions and cook till golden.
  3. Now add jeera powder, red chilli powder, garam masala powder, coriander powder, chat masala powder and mix well.
  4. Add chopped tomatoes and mix well. Add salt and 1 cup water preserved from the boiled vegetables and mix well.
  5. Cover and cook for 20 mins till the tomatoes become soft and mushy.
  6. Now add food color and mix well. (I did not add)
  7. Now add vegetables in the soft tomato mixture. Mix well.
  8. Now with the help of potato masher mash all the vegetables properly.
  9. Add 1 cup left over water from the boiled vegetables. Mix well.
  10. Now add beetroot and mix well. Cover it and simmer for 20 mins. Now add lemon juice and mix well.
  11. Switch off the flame. Pour it in serving bowl. Garnish with coriander leaves and onions. Top with loads of butter.
  12. Serve hot with pav buns / bread.
