ABOUT Winter special chicken stew with vegetables RECIPE

A variety of winter vegetables cooked with chicken. This light and healthy stew is too tasty and perfect for a meal in this season.

Ingredients Serving: 4

  1. Chicken medium pieces 500 g
  2. 2 teaspoon vegetable oil
  3. Butter 20 g
  4. Whole Cardamom 2
  5. Whole cloves 3
  6. Cinnamon stick 1" long 1
  7. Potato 2 medium size cut into halves
  8. Baby corn 4 cut into halves
  9. Carrots 2-3 nos thickly sliced
  10. Beans chopped 3/4 cup
  11. Beetroot 8 slices ( as thick as carrots slices)
  12. Cauliflower 8 medium pieces
  13. Tomato 1 big size cut into 4 pieces
  14. Green peas 1/2 cup
  15. Onion diced 1 big size
  16. Garlic 8-10 cloves
  17. Ginger shredded 1 tablespoonful
  18. Turmeric powder 1/2 teaspoon
  19. Salt as per taste
  20. Sugar 1 teaspoon
  21. Black peppercorns 8-10
  22. Whole green cilli 2
  23. Black pepper powder 3/4 teaspoon
  24. Milk 1 cup
  25. Fresh cream for garnishing( optional)

Instructions

  1. Clean and rinse chicken pieces and keep aside.
  2. Heat 2 teaspoon oil plus butter. Add whole cinnamon stick, Cardamom, cloves, let them splutter.
  3. Add diced onion and shallow fry it. Sprinkle sugar.
  4. Add garlic cloves and shredded ginger stir well. Add tomatoes.
  5. Add chicken pieces and fry for few minutes
  6. Add all vegetables, green chillis turmeric powder, black peppercorns and mix well. Stir it for few minutes.
  7. Add 3 cups of warm water and cover it. Let it cook on slow flame with cover until vegetables and chicken done properly.
  8. Use a pressure cooker it will take 8- 10 minutes only on medium low flame.
  9. Then remove cover and add 1 cup milk. Mix once again. Sprinkle black pepper powder. Cover it and switch off the burner.
  10. Leave for few minutes . Garnish with fresh cream and serve hot with steamed rice or with toasted bread.
