A perfect dessert for the winter . I used fresh and young red carrot to make halwa.

Ingredients Serving: 10

  1. Fresh red carrot (grated) 3 cups
  2. Full Fat Milk 1 cup
  3. sugar 1 cup
  4. Ghee 2 Tbsp
  5. Roasted dry nuts (of your choice)
  6. Cardamom Powder 1/4 tsp
  7. Beetroot juice (optional)


  1. Wash the fresh carrots,peel, remove the inner white part and grate with hand grater.Set aside.
  2. Roast the nuts on a low flame until crunchy. You can also fry them in ghee.
  3. Let it cool and chop them.Set aside.
  4. In a kadhai , add 1 tbsp ghee and add grated carrots and saute them for 2-3 mins.
  5. Add 1-2 tbsps beetroot juice and mix it well to get the desired red colour (you can skip this step if you don't want)
  6. Add milk and cook until milk has completely evaporated.
  7. Keep stirring contantly to prevent from burning.
  8. Add sugar and stir.Sugar will release moisture.
  9. Cook until moisture evaporates.
  10. Add 1 tbsp ghee and stir.continue stirring until the halwa thickens.
  11. Add roasted nuts ( I used cashews, pista, almonds) and cardamom powder and mix well. Cook for another 2 mins and done.
  12. Garnish with few chop nuts. Sprinkle some desiccated coconut powder and serve warm or chilled.
