ABOUT Vegetable Rice with Tomato Soup RECIPE

This is my favourite winter dinner dish. Hot tomato soup when relished with vegetable rice is a perfect combo.

Ingredients Serving: 4

  1. For Soup:
  2. 5 tomatoes(medium sized)
  3. 1 Onion(small size)
  4. 2 carrots(diced)
  5. Cornflour(I teaspoon)
  6. Roasted cumin seeds powder(1/2 teapsoon)
  7. 2 tsp sea salt, plus more to taste
  8. 1/4 tsp ground black pepper, plus more to taste
  9. Cream(Or Malai) (2 teaspoon)
  10. Butter(1 tablespoon) plus more to taste
  11. For Vegetable Rice:
  12. Rice(2 cups)
  13. Green Peas(1 cup) (Frozen or Fresh)Fresh always taste better
  14. 2 carrots(chopped)
  15. 1/2 cup corns(par boiled)
  16. 1 tablespoon olive oil
  17. 1/2 teaspoon cumin
  18. 1 bay leaf
  19. 2 cloves
  20. a pinch cinnamon powder
  21. salt(to taste)
  22. water(4 cups)

Instructions

  1. Instructions For Soup:
  2. In a pressure cooker, boil tomatoes, carrots, and onion(Put some water accordingly). Give 2-3 whistles.
  3. When the cooker opens, and the mixture cools down, blend it using a mixer or food processor.
  4. Sieve the mix so that seeds are separated.
  5. In another pan, heat the butter. Pour over the sieved puree.
  6. Add cumin seeds powder, salt, and black pepper. Bring it to 2-3 boils.
  7. In a small cup, mix cornflour with some water. Put this mixture into the soup.
  8. Add some cream or malai.
  9. Season to taste with any other additional salt and/or pepper.
  10. Instructions For Rice:
  11. Soap rice in water for 15 minutes.
  12. Put oil in a Pan.
  13. Add cumin seeds, bay leaf, cloves, cinnamon powder.
  14. Add the vegetables and saute for 2 minutes.
  15. Add the soaked rice to the mixture. Saute for 2 minutes. Saute very softly so that Rice does not break.
  16. Add water and cook the rice for 10-12 minutes or until all of the water has evaporated and the rice is tender.
  17. Rice is ready. Serve Hot with Soup.
