delicious yummy Christmas cake with the punch of Rum and lots of dry fruits specially prepared on the eve of Christmas, and to celebrate New Year

Ingredients Serving: 6

  1. All purpose flour 200 grams
  2. Sugar 100 grams
  3. Eggs 3-4
  4. Rum 150 mili litre
  5. Chopped almonds 1 tablespoon
  6. Chopped cashew nuts 1 tablespoon
  7. Chopped pistachios 1 tablespoon
  8. Chopped dry figs 1 tablespoon
  9. Tutty fruity 1 tablespoon
  10. Raisins 1 tablespoon
  11. Baking powder 1 teaspoon
  12. Baking soda 1 teaspoon
  13. Melted butter or oil 150 mili litre
  14. Vanilla essence 2 teaspoons
  15. Cocco powder 1 to 2 teaspoons

Instructions

  1. Arrange all mentioned ingredients
  2. Soak all the chopped dry fruits and Tutty fruity in rum for whole day or preferably one week
  3. Melt sugar in a heavy bottom container until it starts caramelising ... don't over done it .. or it will taste bitter
  4. Immediately add some milk or water to caramel and dissolve it, keep it aside to cool down
  5. Now sift , all purpose flour ,baking powder baking soda and cocoa powder, preferably two to three times
  6. In a mixing bowl take eggs and with the help of hand blender beat well until light and fluffy
  7. Add vanilla essence, oil, caramel and beat it again
  8. Now add sifted flour to, beaten mixture in small quantities and mix in cut and fold method
  9. Add rum soaked dry fruits with remaining rum
  10. Fold the whole mixture or cake batter , lightly
  11. By the time preheat oven on 200 degrees
  12. Take a oven proof baking dish, apply some oil and dust it with some flour to avoid sticking of cake in bottom
  13. Bake the cake on 180 degrees for 20 to 25 minutes
  14. Perfectly baked Christmas rum cake is ready... Let it cool completely, later some rum can also be sprinkled on cake to make it even more tasty and soft
  15. Garnish as you like and enjoy your Christmas party with delicious Christmas rum cake
