ABOUT Winter Pie RECIPE

This is very festive dish and great taste and is totally differnt in texture.

Ingredients Serving: 6

  1. For pastry:-2 cups flour
  2. 2 tbsp semolina
  3. 1 cup melted unsalted butter
  4. 1 cup icing sugar
  5. A few drops vanilla essence
  6. 1 tbsp salt
  7. 1 to baking powder
  8. 1 tbsp rose water
  9. For filling:-1 cup dates stoned and minced
  10. 1/2 cup dry desiccated coconut
  11. 2 tbsp rasins and black currants
  12. 2 tbsp each cashewnuts, walnuts, hazzle nuts,and candied lemon peels chopped
  13. 3 tbsp milk
  14. 2 tbsp butter
  15. 1 tbsp rose water
  16. 1/2 tsp each of cardamom, cinnamon, and nutmeg powdered
  17. A pinch of salt

Instructions

  1. For pastry:- drive together flour, semolina, salt, icing sugar and baking powder.
  2. Rub melted butter into the flour till the mixture resembles bread crumbs.
  3. Add rose water and vanilla and mix well.
  4. Add enough cold water to bind to a stiff dough and knead till smooth dough.
  5. Cover and refrigerate for 10 minutes.
  6. Heat butter in a non stick pan add dates and fry for a few minutes.
  7. Add coconut and mix well. Add milk and rosewater.
  8. Cook till the mixture is soft paste. Mix remaining dry fruits.
  9. Add salt, cardamom, cinnamon and nutmeg powders. Keep aside.
  10. Divide dough into 2 halves and roll one portion to fit a rectangular baking tray.
  11. Press down at the edges and spread the date mixture .
  12. Roll the other half the same way and cover the top of the filling.
  13. Press lightly and flute the edges. Make two cuts in the center for the steam to escape.
  14. Brush with milk and bake it at 150℃ for 25-30 minutes.
  15. Sprinkle little castor sugar and slice and serve.
