ABOUT Kheer Komola / Orange Kheer (Milk Pudding with Orange) RECIPE

This is a traditional winter delicacy and is very popular among Bengalis. In my family, it is kind of must during Makar Sankranti. The creamy, concentrated and flavourful milk with a dash of freshly peeled orange makes it truly heavenly. This year, I have started my pre-Sankranti preparation with Kheer Komola and I am loving every bit of it.

Ingredients Serving: 4

  1. Full fat milk 1 litre
  2. Orange 2 nos. (peeled and segmented)
  3. Sugar 5 tablespoon
  4. Cardamom powder 1 teaspoon
  5. Bay leaves 2 nos.
  6. Saffron 1 pinch
  7. Almond 5 nos. finely chopped (for garnishing)
  8. Orange peel 5 thin slices (for garnishing)

Instructions

  1. Peel off the transparent shell of the orange segments and keep aside.
  2. Heat the milk by adding bay leaves on low to medium flame by constantly stirring it. Reduce it to little less than half. It should take around 45 minutes to 1 hour.
  3. Once the milk is reduced, add cardamom powder, saffron and sugar and cook for another 8-10 minutes on low flame.
  4. Turn off the flame, remove the bay leaves and let it cool down to room temperature.
  5. Add the orange segments to the milk and give a quick mix.
  6. Garnish with almond and orange peel and keep it in the refrigerator for 5-6 hours. Serve chilled.
