ABOUT Narkel-er Jaam Pitha RECIPE

This time of the year is perfect for making sweets. Sankranti is round the corner and my kitchen has already decked up with jaggery, coconut, sesame, flour and all that are needed to make Bengali pitha-puli. Pithas are famous Bengali fried/steamed/boiled cakes or snacks prepared during festivals like holi, diwali, sangranti and so on. Back home, my Mom used to sit with my Pishimoni (Dad’s sister) every year before Sankranti and Diwali to decide Pitha Menu (menu for snacks & sweets). Together, they used to prepare some amazing snacks and sweets among which Narkel-er Jaam was the most famous one. This pitha is my Mom's speciality and I have learned it from her.

Ingredients Serving: 4

  1. Grated coconut 2 cup
  2. All purpose flour (maida) 1 cup
  3. Sooji 3 tablespoon
  4. Sugar 4-5 tablespoon
  5. Oil (as required for deep frying)

Instructions

  1. Mix coconut, maida, sooji and sugar together in a mixing bowl and knead the mixture properly to make a soft dough. Don’t add extra water. Grated coconut contains enough moisture and that should serve the purpose.
  2. To make pitha, make small balls from the dough and give them oblong shape by using your palm.
  3. Heat required oil in a pan and deep fry the pithas until they turn golden brown.
  4. Spread paper in a plate and remove the fried pithas to it. The paper will soak the excess oil.
  5. Your Narkel-er Jaam Pitha is ready now.
