In a wide bowl , add 250 grams powdered jaggery . Use dark jaggery for the rich colored pudding .
Add 125 grams softened unsalted butter .
Add 1 large egg . Whisk all until combined . Don’t over- beat .
Add the second egg and whisk until mixture turns creamy . Again take care you don’t over-beat.
Add 125 grams raisins .
Add 125 grams candied orange peels chopped .
Add 120 grams dry fruits of your choice .
Add 125 grams chopped dates .
Pour 40 ml orange juice in.
Mix all together.
Add in the sifted 75 grams plain flour .
Sift and add 1/4 teaspoon baking powder .
Sift and add 1/2 teaspoon ground ginger powder.
Sift completely before adding .
Mix all the ingredients .
Finally Add in 140 grams bread crumbs .
Mix really well .
Transfer the pudding mix to a greased dome shaped bowl . Level the surface of the pudding mix.
Double seal the bowl with a aluminum foil as shown .
Use 2 rubber bands and make sure the foil seal is intact.
This is how the sealed bowl looks .
Cut the extra foil and discard .
Now place the sealed bowl inside a steamer which contains boiling hot water. Water level should
touch the base of the bowl . Cover and cook for 6 hours in simmered heat . Do check water level
in-between while cooking. Once done , take the bowl out from the steamer . Wait for 15 minutes .
Take off the rubber bands and foils used for sealing .
Unseal completely as shown . Use a knife gently to loosen sides , release pudding from the bowl .
Tilt the warm pudding bowl on a plate . Christmas Pudding falls beautifully .
Christmas Pudding is ready . Top it up with sweetened cream and cherries .
This Christmas Pudding is free from alcohol .
Cut the pudding and serve .
